Tomato soup with meatballs and rice is a traditional Greek soup recipe. It’s not only ideal for cold winter days but also during hot summer days.
An easy recipe with a few basic ingredients and very little preparation time! It also adapts very easily to your needs and appetite. Don’t hesitate to add vegetables that you may have in your pantry or that you want to eat.
Most of the time, I add my favorite veggies, aka potatoes and carrots. Plus, I enjoy my tomato soup spiced up with chili flakes or tabasco, especially during cold days.
The only difference between this recipe with the authentic one is that I’m going to use vegan mince instead of ground beef. So we’ll enjoy a vegan soup with all the flavors and aromas of the authentic dish!
In Greece, we serve this dish with fresh bread and feta cheese. But again, we can replace feta with vegan and enjoy a completely vegan comfort soup!

Greek Tomato Soup With “Meatballs” Recipe

Tomato Soup With Vegan “Meatballs” & Rice
Ingredients
For The Vegan "Meatballs"
- 800 gr vegan mince
- 1 medium yellow onion
- ½ small red bell pepper
- ⅓ cup glutinous rice
- 2 tbsp olive oil
- 2 tbsp water
- 2 tbsp parsley chopped
- 2 tbsp mint chopped
- ½ tsp black pepper
- a pinch of salt
For The Tomato Soup
- ¼ cup olive oil
- 500 gr lightly concentrated tomato juice
- ¼ cup glutinous rice
- 1 tbsp tomato paste
- 2 cups warm water
- 2 bay leaves
- ½ tsp salt
- ½ tsp black pepper
Instructions
For The Tomato Soup
- Place a large pot in high heat and add the olive oil.
- When the olive oil is hot, add the rice and stir for half a minute.
- Add the remaining ingredients to the pot (tomato juice, tomato paste, salt, pepper, bay leaves, water) and mix. Cover with a lid and bring to a boil.
For The Vegan "Meatballs"
- In a large bowl, add the vegan mince, rice, salt, pepper, olive oil, water, parsley, and mint.
- In a small food processor add the onion, and red pepper.
- Transfer the crushed onion and red pepper to the bowl with the rest of the ingredients and mix well.
- Shape about 20 "meatballs" When the soup boils, add them to it.
- Add extra water if needed. We want the tomato sauce to cover all the meatballs.
- Cover with the lid and bring it to a boil.
- When it boils, reduce the heat to medium and simmer for 30-35 minutes until the rice is cooked through and the sauce has thickened.
Notes
- Served: Serve with feta (or vegan feta) and homemade bread on the side.
- Variations: Add vegetables such as potatoes, carrots, sweet potatoes, and zucchini, but you may need to change the cooking time until your ingredients are cooked properly.
- Storage: Serve and enjoy it immediately. Store in an airtight container in the fridge for up to 5 days.
- Extra Tip: If you don’t use vegan mince, use ground beef, and follow the same recipe to enjoy the authentic meatball soup. This is the only difference between the original recipe and this one.
