This recipe needs 5 basic ingredients and a maximum preparation time of 10 minutes.
I like to use a hand mixer to make my life easier and reduce the time it takes to prepare.
Plus, the hand mixer’s container is a perfect tool for transferring my pancake mix to the pan!

Recipe
Yield: 14 medium-sized banana pancakes
Prep Time: 10 min
Cook Time: 15 min
Total Time: 25 min
Ingredients
1 cup all-purpose flour
1/2 cup unsweetened coconut milk, or any type of unsweetened plant-based milk, or dairy milk
1/4 cup brown sugar, or granulated sugar
1 medium egg
a pinch of salt
1 tsp baking powder
1/2 tsp vanilla extract
2 small ripe bananas, or 1 & 1/2 medium bananas
Extra Tip: Caramelize the remaining banana! Cut the banana in half, add a little sugar, heat it, and use it on top of your pancakes! Perfect! To caramelize the banana you will need:
1/2 banana, sliced
1 tbsp brown sugar
Directions
- In a large bowl or hand mixer’s container add the egg, milk, salt, and sugar and mix.
- Add the flour and baking powder to the mixture and mix until smooth.
- Preheat a large frying pan on medium-high heat.
- Brush your pan with oil (coconut oil is perfect) lightly especially if your pan is non-stick.
- When heated, pour about 1/4 of a cup of the mixture into the pan and let it cook. Cook about 1 minute, flip when the top of the pancakes are bubbly and the sides look firm and goldish. Cook the other side for another 1 minute.
- The cooking time always depends on the amount of mixture you use in each pancake and the temperature of your pan.
For the caramelized banana:
- Cut the banana into slices and add it to the pan when you are done with your pancakes.
- Add a tablespoon of brown sugar and stir for a minute.

- Variations: Add :
- fresh berries/strawberries to the mixture.
- one teaspoon of cinnamon in the mixture.
- as sugar, as you prefer in the mixture, I always add the minimum amount for a healthier option. If the bananas are very ripe, you can reduce the sugar in half.
- If the plant-based milk isn’t unsweetened it’ll be better to reduce the amount of sugar you use.
- Storage: keep the mixture in an airtight container in the fridge overnight and cook the banana pancakes the next morning!
