Hey guys! Looking for an easy and tasty potatoes salad recipe? If yeah, then welcome! You are in the right place! This is a pretty easy recipe with a lot of variations depending on your flavors and your appetite!

You can combine many different boiled vegetables or make it only with boiled potatoes. No matter how you do it, it will be very appetizing.

I usually try to combine different vegetables, herbs, and ingredients to make it as healthy, nutritious, and delicious as possible! So you are free to improvise and try a different salad each time! 

You can easily turn this recipe into vegan if you follow this type of diet!

Yield: 1 salad bowl, 4 portions

Prep Time: 20 min

Cook Time: 30 min

Total Time: 50 – 60 min

Ingredients

  • 500 gr baby potatoes, rinsed well and cut in half
  • 1 red or white onion, diced
  • 1/2 cup fresh onion, chopped
  • 1/2 cup olives, cut in half
  • 1 tbsp caper
  • 1 tbsp fresh basil leaves, chopped
  • 1 tbsp fresh dill, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tbsp fresh parsley (optional)
  • 1 tbsp oregano dried or fresh
  • 1 tsp salt
  • 1 tsp black pepper

Optional Ingredients

  • 2 eggs, boiled and cut into four pieces
  • 5 baby carrots, boiled and cut in 2cm pieces
  • 1 zucchini, boiled and cut in 2 cm pieces
  • 1 cup sweet potato, boiled and cut in 2 cm pieces
  • 1 cup mushrooms, boiled and cut in 4 pieces

Salad Dressing

  • 1/4 cup virgin olive oil
  • 2 tbsp mustard
  • 1 tbsp balsamic vinegar
  • 1 tbsp honey (optional)
  • 1 ripe avocado (optional)

Directions

  1. Rinse well all the vegetables and the herbs.
  2. Cut in half the baby potatoes and 2 cm pieces the vegetables you would like to use and boiled them at medium-high heat until they become as soft as you prefer.
    • Extra Tip: Carrots and potatoes usually need the same cooking time (around 20 minutes) if you will use sweet potatoes and zucchini add them later in your pot because they need less time to cook (around 15 minutes).
  3. In a small pot add your eggs and boiled them in high heat until they become hard. (Around 15 – 20 minutes)

Time to prepare our salad dressing until our vegetables get boiled:

  1. In a container add all your ingredients for the salad dressing.
  2. Μix well with a hand whisk for a couple of minutes until it becomes a thick and aromatic dressing.
    1. Extra Tip: If you are going to use avocado in your dressing then put it first in a food processor until it has a smooth creamy texture.
    2. Then mix it with your dressing salad.

Last Step For Our Potatoes Salad Recipe:

  1. Put our boiled potatoes, vegetables, and eggs in a big bowl.
  2. Add the olives, caper, onions, all the herbs, and spices, and stir well.
  3. Add your salad dressing and mix all the ingredients.

Notes

  • Storage: Store your potatoes salad in the fridge for up to 5 days.
  • Served: Served with
    • toasted bread, sprinkled with olive oil, salt, and dried oregano
    • a glass of cool white wine
    • a well-cooked fish fillet
    • add it into a cold sandwich, or into a wrap with some pickles.
  • Variations:
    • Add the herbs that you prefer.
    • Add vegetables that you prefer.
    • Topping your salad with crushed feta cheese or some vegan cheese.
  • Extra TIP: Consume it hot when it’s cooked and when it’s cold from the fridge. It’s a hot salad as well as cold.
