It only needs four basic ingredients and a few minutes of preparation time! After that, it takes an hour to chill in the fridge and only 10 – 12 minutes baking time! And these delicious cookies will be ready for you to enjoy!

One of the things that I really like with this recipe besides the little preparation time is that I can make the dough when I have some free time and freeze it for later!

This way I can bake them and enjoy them at any time without the preparation time.

I remove the dough from the freezer and put it in the fridge from the night before and bake them the next morning!

What’s better than fresh-baked butter cookies with my morning coffee!

An easy and tasty recipe for butter cookies! It only needs four basic ingredients and a few minutes of preparation time! After that, it takes an hour to chill in the fridge and only 10 – 12 minutes baking time! And these delicious cookies will be ready for you to enjoy!

Ingredients
  

  • 200 gr unsalted butter , room temperature
  • 100 gr granulated sugar (1/2 cup)
  • 2 small egg yolks
  • 240 gr all-purpose flour (2 cups)
  • 2 tsp vanilla flavor (5mL)
  • 1 pinch of salt
  • 2 tbsp granulated or brown sugar , for rolling, optional

Instructions
 

  • In a mixer bowl fitted with the paddle attachment, beat the soft butter for a minute until fluffy.
  • Add granulated sugar and salt and beat on medium speed for another 2 minutes until creamy.
  • Time to add the egg yolks and vanilla extract while mixing and beating for another 30 seconds until combined. Scrape the sides of the bowl to mix the ingredients well.
  • Add the flour and beat on low speed until combined. Don't beat the dough too much.
  • Form the dough into a log with a diameter of 4 cm.
  • Roll the logs into brown sugar if you want a pleasant crunch on the edge of the cookies. If the dough is too soft and difficult to handle, do it after chilling. This step is optional!
  • Wrap the logs in plastic wrap or parchment paper and refrigerate for at least 1 hour until chill.
  • Preheat the oven to 180°C.
  • Line a pan or more with parchment paper. It depends on the amount of cookies you bake. If you bake all the dough, then you may need two baking pans.
  • When the dough has cooled and set, cut it into slices of uniform thickness, about 1-2 cm with a sharp knife.
  • Place the cookies on the baking sheet and bake for 10-12 minutes, or until lightly golden brown around the edges.
  • When the cookies are ready should be soft and bright. Let the cookies cool before removing them from the pan.

  • Served with:
    • a cup of warm milk with honey, a hot chocolate with cinnamon, an aromatic coffee.
  • Variations: 
    • Replace vanilla flavor with other baking flavorings such as orange, lemon, almond, or rum.
  • Storage:
    • Store baked butter cookies in an airtight container at room temperature for up to 5 days.
    • The dough can be refrigerated for up to 3 days or frozen for up to two months.

    • Divide the dough in half, or as much as you want to handle it easier, or if you want to freeze it in smaller portions.
