1 medium egg
1/2 tsp baking powder
1/2 tsp vanilla extract

- Add the flour and baking powder to the mixture and continue to mix for another 1 minute until smooth.
- Preheat a large frying pan on medium-high heat.
- Brush your pan with oil (coconut oil is perfect) lightly especially if your pan is non-stick, when heated, pour about 1/4 cup or a little less of the mixture into the pan and let it cook.
- Cook about 1-2 minutes, flip when the top of the pancakes are bubbly and the sides look firm and goldish.
- Cook the other side for another 1-2 minutes. The cooking time always depends on the amount of mixture you use in each pancake.
