Yield: ~ 15 pancakes

Ingredients

1 cup all-purpose flour

1/2 cup milk (or unsweetened plant-based milk)

1/4 cup granulated sugar (or brown sugar)

1 medium egg

1/2 tsp baking powder

1/2 tsp vanilla extract

a pinch of salt

Directions

  1. Mix the egg, milk, salt, and sugar in a bowl.
  2. Add the flour and baking powder to the mixture and continue to mix for another 1 minute until smooth.
  3. Preheat a large frying pan on medium-high heat.
  4. Brush your pan with oil (coconut oil is perfect) lightly especially if your pan is non-stick, when heated, pour about 1/4 cup or a little less of the mixture into the pan and let it cook.
  5. Cook about 1-2 minutes, flip when the top of the pancakes are bubbly and the sides look firm and goldish.
  6. Cook the other side for another 1-2 minutes. The cooking time always depends on the amount of mixture you use in each pancake.

  • Strawberry jam or any kind of jam you like
