The most summery and out of the box salad recipe! Watermelon with feta cheese and mint leaves, are you ready to give it a try? It is a pretty unusual combination of ingredients but you’d love it!
Healthy and light! Ideal for hot summer days when you want to have a cool snack, with a combination of sweet and savory.
The portion of this recipe will be for a person’s main meal/ snack or as a shared salad bowl as a side dish for two! You will only need 3 ingredients, an appetite for a refreshing salad, and a few minutes of your time! Let’s get started!
Recipe
Yield: 1 salad bowl

Ingredients
- 2 medium seedless slices of watermelon, 3-4 cups, cut into cubes
- 1 cup feta cheese, cut into cubes or crumbled
- 1/2 cup of fresh basil leaves, chopped at half
- 1 tbsp olive oil
- 1 tsp balsamic vinegar
- 1 tsp honey
- 1/2 tsp salt
- 1 cup cucumber, cut into cubes (optional)
Directions
- Remove the seeds of the watermelon slices and cut them into small cubes, their size should be ideal as the perfect bite for you! Put them into a deep bowl.
- Cut the feta into slightly smaller pieces or just crush it with your hands and place it on top of the watermelon.
- Rinse and chop the mint leaves and add them in the bowl.
Now it’s time to prepare our salad dressing!
- Put in a small container the olive oil, the balsamic vinegar, the honey, and the salt and mix them until it becomes a smoothy dressing!
- It is ready to add to your salad!
Notes
- Storage: Store your watermelon with feta and mint salad in the fridge for a day although it is better to consume it immediately.
- Served: Served with
- a glass of iced and refreshing fancy water,
- a glass of cool white wine
- some salty crackers
- Variations:
- Instead of mint, you can use basil leaves
- if you don’t enjoy neither mint nor basil you can eliminate them of your salad, it still will be Yummy!
- Extra TIP: Try to eat your salad right away when you prepare it when all your vegetables are fresh and cool from your fridge.
