Yield: 2 portions

Ingredients
2 large slices of sandwich bread
1 tbsp olive oil
170 gr canned mushrooms
1 tsp chili flakes
1 tsp garlic powder, or 1 clove garlic minced
1/4 tsp salt
1 tbsp fresh onion, chopped
1 large avocado
1/2 fresh lime juice
1 tsp balsamic vinegar
1/2 tsp brown sugar
1 tsp dried thyme
1/2 tsp black pepper
1 tsp dried oregano

Instructions
- Rinse and drain the canned mushrooms.
- Sprinkle the slices of bread with half a teaspoon of olive oil and dried oregano and toast.
- In a small pot add half a teaspoon of olive oil and placed it on medium-high heat.
- When hot, add the mushrooms and season with salt, black pepper, dried thyme, a few chili flakes, and sauté for about 2 minutes.
- Add the balsamic vinegar and sugar and stir for another 2 minutes until almost all the liquids have evaporated.
- Turn off the heat, add the fresh chopped onions and leave it there for a minute to prepare your avocado sauce.
- Cut the avocado, put it in a small bowl, and season with a pinch of salt, black pepper, chili flakes, lime juice, and a little olive oil.
- Smash it with a fork until it becomes a chunky sauce.
- Spread it on your toasted bread slices and top it with your delicious mushrooms!

- Variations:
- Add a poached egg on top of crumbled eggs.
- Instead of avocado sauce spread spicy eggplant sauce.
