Vegan Omelet Recipe

Ingredients:

  • 500g BIO tofu, crumbled
  • 1 red bell pepper, diced
  • 1 big white onion, diced
  • 10 cherry tomatoes, cut in half
  • 1/2 cup chopped leek
  • 2 tbsp extra virgin olive oil
  • Salt and pepper, to taste
  • 1 tbsp oregano
  • 1 tsp paprika
  • 1 1/2 tsp turmeric

Instructions:

  1. Sauté the onion and pepper:
    • Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and sauté until it becomes translucent and fragrant.
    • Toss in the red bell pepper and cook for about 3-4 minutes until it softens.
  2. Add the tofu and spices:
    • Add the crumbled tofu to the skillet along with turmeric, paprika, oregano, salt, and pepper. Stir everything together and let it cook for about 5 minutes, allowing the flavors to meld.
  3. Finish with the tomatoes:
    • Add the cherry tomatoes to the skillet and gently stir. Cook for another 2-3 minutes until the tomatoes soften slightly.
  4. Serve and enjoy:
    • Your vegan “strapatsada” is ready! Serve it hot with a side of crusty bread, vegan feta sprinkled with oregano and fresh olive oil, avocado slices, or a fresh Greek salad. It’s hearty, healthy, and absolutely delicious.
