Vegan Omelet Recipe
Ingredients:
- 500g BIO tofu, crumbled
- 1 red bell pepper, diced
- 1 big white onion, diced
- 10 cherry tomatoes, cut in half
- 1/2 cup chopped leek
- 2 tbsp extra virgin olive oil
- Salt and pepper, to taste
- 1 tbsp oregano
- 1 tsp paprika
- 1 1/2 tsp turmeric
Instructions:
- Sauté the onion and pepper:
- Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the diced onion and sauté until it becomes translucent and fragrant.
- Toss in the red bell pepper and cook for about 3-4 minutes until it softens.
- Add the tofu and spices:
- Add the crumbled tofu to the skillet along with turmeric, paprika, oregano, salt, and pepper. Stir everything together and let it cook for about 5 minutes, allowing the flavors to meld.
- Finish with the tomatoes:
- Add the cherry tomatoes to the skillet and gently stir. Cook for another 2-3 minutes until the tomatoes soften slightly.
- Serve and enjoy:
- Your vegan “strapatsada” is ready! Serve it hot with a side of crusty bread, vegan feta sprinkled with oregano and fresh olive oil, avocado slices, or a fresh Greek salad. It’s hearty, healthy, and absolutely delicious.
