Recipe

Yield: 10 cookies

Prep Time: 15 min

Ingredients

1 1/2 cups oats

1 egg white

2 tbsp Greek yogurt

1 tbsp olive oil

1 tbsp flax seeds

2 tbsp milk

1 tsp dried thyme

1 tsp sweet paprika

1/2 tsp garlic powder

1/4 salt

1/4 tsp black pepper

1 tsp chia seeds

1 cup (150 gr) crumbled feta cheese

Egg Wash

1 egg yolk, diluted with 1 tsp milk or water

Instructions

  1. Preheat the oven to 180°C, set it to the fan mode, or to conventional heating.
  2. Add the oats to a food processor and blend it until it becomes like flour.
  3. Add all the ingredients (greek yogurt, olive oil, egg white, thyme, paprika, feta, black pepper, and chia and flax seeds) in a big bowl except the oat flour and mix them with a spatula.
  4. Now add the oat flour to the mixture and stir with a spatula until it becomes a chunky dough.
  5. Shape with your hands the savory cookies in a size of about 5 cm and a thickness of 1.5 – 2 cm and transfer to a baking pan lined with parchment paper.
  6. Brush them with the egg wash (combine the egg yolk with some milk or water) and bake them for 20-25 minutes.

Notes

  • Served: Served with
    • a Greek yogurt dip,
    • hot chocolate drink or hot coffee,
    • a glass of cool white wine.
  • Variations: 
    • Add more or less feta,
    • use some vegan cheese instead of regular cheese,
    • add grated parmesan on the top after the egg wash.
    • add spicy paprika instead of sweet if you prefer spicy snacks.
  • Storage: keep in an airtight container at room temperature for up to 4 days.
