Recipe
Yield: 10 cookies

Ingredients
1 1/2 cups oats
1 egg white
2 tbsp Greek yogurt
1 tbsp olive oil
1 tbsp flax seeds
2 tbsp milk
1 tsp dried thyme
1 tsp sweet paprika
1/2 tsp garlic powder
1/4 salt
1/4 tsp black pepper
1 tsp chia seeds
1 cup (150 gr) crumbled feta cheese
Egg Wash
1 egg yolk, diluted with 1 tsp milk or water

Instructions
- Preheat the oven to 180°C, set it to the fan mode, or to conventional heating.
- Add the oats to a food processor and blend it until it becomes like flour.
- Add all the ingredients (greek yogurt, olive oil, egg white, thyme, paprika, feta, black pepper, and chia and flax seeds) in a big bowl except the oat flour and mix them with a spatula.
- Now add the oat flour to the mixture and stir with a spatula until it becomes a chunky dough.
- Shape with your hands the savory cookies in a size of about 5 cm and a thickness of 1.5 – 2 cm and transfer to a baking pan lined with parchment paper.
- Brush them with the egg wash (combine the egg yolk with some milk or water) and bake them for 20-25 minutes.

- hot chocolate drink or hot coffee,
- a glass of cool white wine.
- Variations:
- Add more or less feta,
- use some vegan cheese instead of regular cheese,
- add grated parmesan on the top after the egg wash.
- add spicy paprika instead of sweet if you prefer spicy snacks.
- Storage: keep in an airtight container at room temperature for up to 4 days.
