Ingredients
2 medium apples, peeled and cut in medium – small cubes or medium-thin slices
3/4 cup brown sugar
1 medium egg
3/4 cup coconut milk unsweetened, or any type of unsweetened milk
1/2 cup unsalted butter, melted or at room temperature
1 1/4 cup all-purpose flour
2 tsp ground cinnamon
1 tsp baking powder
pinch of salt
1 tsp vanilla extract
1/2 cup roughly chopped walnuts, optional
Instructions
- Brush with butter a small baking tray, or a cake pan.
- Sprinkle with a teaspoon of brown sugar and a teaspoon of ground cinnamon and add the apple cubes, or slices (and chopped walnuts if you prefer). On top sprinkle again with a teaspoon of brown sugar and a teaspoon of cinnamon.
- In a large bowl add the melted butter (not hot) and brown sugar and mix well with a hand mixer.
- Add the egg and mix well for a minute.
- Time to add the milk, vanilla extract and a pinch of salt and mix for 2 more minutes until smooth.
- Last step, add the flour and baking powder and mix until it becomes a smooth, liquid mixture.
- Pour the mixture over the apples and place the baking dish in the oven. Bake the apple cake for 55 minutes at 180 ° C.
