I recently found this simple avocado sauce for pasta and immediately became our week’s favorite meal!
Give it a try and maybe it’ll be yours too!
It only needs a few ingredients and a minimum of preparation and cooking time. It is healthy, with a fresh taste and ideal for hot summer days because it is delicious fresh cooked but also directly from the fridge.
So, let’s cook!

Ingredients
Avocado Sauce
- 2 large ripe avocados, peeled
- 2 cloves of garlic
- 1/2 fresh lemon juice, or lime juice
- 1 tsp olive oil, extra virgin
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp oregano dried
- 1/2 tsp chili powder
Extra topping
- 1 cup cherry tomatoes, cut in half
- 1 cup feta cheese, crushed – you can use vegan feta or cheese
Pasta
- 500gr pasta, prefer penne or fusilli
Directions
Cook your pasta:
- Fill a large pot with water add salt if you want and put it on high heat. This is the pot where you cook the pasta according to the directions on the box.
While you are waiting for water to boil and cook your penne or fusilli, let’s prepare our avocado sauce for pasta:
- Put all the ingredients for the sauce in a food processor (avocado, garlic, lemon juice, olive oil, salt, pepper, and oregano) and mix them until it becomes a creamy, soft sauce.
- Crushed your feta cheese and cut your cherry tomatoes in half and put them in a bowl.
Time to combine them
- Put your hot pasta in a big bowl.
- Add the avocado sauce and mix them.
- Put the feta cheese and the cherry tomatoes and mix them once more.
It’s ready! Time to enjoy! Easy and quick, right?!
Notes
- Storage: keep in an air-tight container in the fridge for up to 3 days.
- Served: Served with some fresh arugula on the top.
- Variations: You can add more or less garlic and chili powder it’s up to your taste preferences.
- Extra TIP: Try it hot as soon as it is cooked and cold from the fridge! It is delicious either way!
