If you are looking for a quick and easy to make, healthy vegetarian recipe with cabbage and rice, then this is the one for you! It needs very basic ingredients and no effort to be prepared and it tastes great! It is a perfect meal for any season of the year!

This is a Greek traditional recipe but with a few touches of my personal taste! Usually, we like to combine this meal with some Greek yogurt or a slice of feta cheese and we almost always have some toasted bread in the side of our dish.

Extra tip, if you want even more yumminess add a fried egg to the top of your meal! The combination of cabbage with rice, with fried egg, is unbeaten!

Ingredients

  • 1 small cabbage or half large, well rinsed and coarsely chopped
  • 1/2 cup rice
  • 2 medium white onions
  • 2 medium carrots
  • 3 cloves of garlic
  • 250 gr canned tomato sauce
  • 1/3 cup olive oil, extra virgin
  • 1 lemon juice
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 dried bay leaf
  • 3 cups hot water

Optional For Serving

  • fried eggs
  • Greek yogurt
  • feta cheese
  • fresh onion, chopped

Instructions

  • Peel the onions, carrots, and garlic, cut them into large pieces and put them in the food processor and chop them roughly. Not in too small not too large pieces.
  • Add the olive oil in a big pot and place it in medium-high heat.
  • When the olive oil is warm add the onions, carrots, and garlic from the food processor and saute them for 3 minutes.
  • Then add the well rinsed and coarsely chopped cabbage in the pot and saute for 5 more minutes until the volume of the cabbage reduced in half.
  • Now add tomato sauce, rice, 3 cups warm water and the spices and herbs, salt, black pepper, bay leaf, and stir all the ingredients.
  • Reduce the heat in medium-low and simmer for 20 minutes until the rice is ready to consume. Check every now and then and add some water if needed. When we turn off the braised cabbage rice, it must be quite juicy. Therefore, if the liquids evaporate during cooking, add a little hot water.
  • At the end, add the juice of 1 lemon and stir and leave it for 10 minutes in the covered pot to absorb its liquids. That is why it is necessary to be juicy when we stop cooking.

    • toasted bread,
    • a fried egg at the top,
    • some Greek yogurt,
    • a slice of feta cheese.
  • Variations: 
    • add as much lemon juice as you prefer
    • add chopped fresh onion on the top.
  • Storage: keep in an air-tight container in the fridge for up to a week.
