A delicious complete meal with the best vegetarian stuffed meatloaf and perfect baked potatoes with tomato marinade.
Having been a vegetarian for a few years now, I developed this vegetarian/vegan meatloaf recipe based on my favorite one I used to eat before changing my eating habits. It is as delicious and easy as the classic meatloaf recipe, and just perfect for a dinner!
Now I use my favorite vegan meat, but if you are not vegan or vegetarian you can replace it with the meat of your choice.
Usually, I like to stuff my meatloaf with boiled eggs and/or cheese (or vegan cheese) and green peppers. Bake it in the oven with some potatoes and a delicious and fresh tomato marinade.

Ingredients
Meatloaf
550 gr (2 packs) Next Level Meat Hack, or vegan meat of your choice
1 large onion
2 large cloves of garlic
2 slices of toast bread, or 8 tbsp whole or ground quick-cooking oats
1 egg, optionally
4 tbsp tomato marinade, or canned tomato sauce
1 tsp olive oil
1 tbsp fresh parsley, chopped
1 tbsp fresh mint, chopped
1 tsp dried oregano
1/4 tsp salt
1 tsp paprika
1 tsp dried thyme
1 tsp black pepper
Baked Potatoes
1 k potatoes
1/4 tsp salt
1 tsp black pepper
1 tsp dried thyme
2 tsp garlic powder
1 tsp dried oregano
2 tbsp olive oil
1 cup water
Tomato Marinade
400 gr canned tomato sauce, or 3 medium tomatoes
1 clove of garlic
2 tsp olive oil
1 tbsp fresh parsley
1 tbsp fresh mint
1/2 green pepper, optional
1 tsp dried oregano
1/4 tsp salt
1 tsp paprika
1 tsp dried thyme
1 tsp black pepper
Stuffing
1 egg, boiled
green pepper, slices or sticks
slices or sticks of cheese of your choice

Directions
Tomato Marinade
- Add all the ingredients for the tomato marinade into a food processor and mix them.
Baked Potatoes
- Preheat the oven to 220°C.
- Peel the potatoes and cut them into medium size pieces.
- Put them in a bowl and add oil, herbs, spices, 4 tablespoons tomato marinade, and stir until marinated.
- Transfer to a baking sheet, add 1 cup water, and place in the oven until the meatloaf is prepared and ready to cook.
Meatloaf
- In a food processor add the toast bread and ground it.
- Put the vegan meat in a large bowl and add oil. egg, oats or ground toast bread, spices, herbs, and two tablespoons of tomato marinate.
- In a food processor put onion, garlic, and mix them.
- Add onion and garlic to the large bowl and mix all the ingredients until smooth.
- Give the meatloaf a shape and if you want to fill it, make a hole up to the middle, add the filling and fill on top with the vegan minced meat.
- Add it in the middle of the pan with the potatoes carefully. If you struggle with it you can use a baking sheet to transfer it and after you place it in the pan cut the sides of the sheet so it will only be under the meatloaf.
- Add the rest of the marinade on the top of the meatloaf and potatoes.
- Bake them for 45 minutes.

- Served: Served with
- a slice of feta,
- tzatziki sauce,
- roasted bread.
- Variations:
- Add the filling you prefer such as vegan cheese,
- bake only the meatloaf and serve with rice or mashed potatoes, or crispy oven potatoes.
- eliminate the egg if you follow a vegan diet
- Storage: Store in an airtight container in the refrigerator for up to 4 days.
