Puffed Quinoa Bars With Peanut Butter

A Healthy, Vegan, and Toddler-Friendly Treat

There’s something special about homemade snacks—knowing exactly what goes into them, customizing them to your taste, and, of course, the joy of sharing them with loved ones. These puffed quinoa bars have become a favorite in my home! They’re naturally sweetened, packed with protein, and have the perfect balance of crunch and chewiness.

Not only are they vegan and healthy, but they’re also great for little ones after their second year. Plus, they require just five simple ingredients—no baking, no fuss!

Perfect for an afternoon snack, lunchbox treat, or even a quick grab-and-go breakfast.

Ingredients Breakdown for the Puffed Quinoa Bars

  • 2 cups Bio Puffed Quinoa – A light and crunchy base with a mild nutty flavor.
  • 1 cup Bio Unsweetened Peanut Butter – Adds creaminess and a dose of healthy fats and protein.
  • 1 tbsp Flower Honey – A natural touch of sweetness that helps bind everything together.
  • 100g Dark Chocolate (75%) – For a rich, slightly bitter contrast that complements the nuttiness.
  • Salt Flowers – A sprinkle of these enhances all the flavors!

Recipe for Puffed Quinoa Bars

  1. Prepare the Base: In a mixing bowl, combine the puffed quinoa, peanut butter, and honey. Stir well until all the quinoa is evenly coated.
  2. Press & Set: Line a small baking dish with parchment paper, then press the mixture in firmly using the back of a spoon.
  3. Refrigerate: Place the dish in the fridge for two hours to allow the mixture to firm up.
  4. Melt the Chocolate: Break the dark chocolate into pieces and melt it using a double boiler or in short bursts in the microwave.
  5. Top & Chill Again: Pour the melted chocolate over the chilled quinoa mixture, spreading it evenly. Sprinkle a touch of salt flowers for that perfect flavor balance.
  6. Final Refrigeration: Return the dish to the fridge and let it chill for another two hours until fully set.
  7. Cut & Store: Once firm, cut into squares or bars. These bars must be stored in the fridge, as they will soften at room temperature. Keep them chilled until ready to eat!

Substitutions & Variations

If you don’t have bio-puffed quinoa, you can swap it for bio-puffed rice or bio-puffed Dinkel (spelt). Instead of peanut butter, try using another unsweetened nut butter like almond or cashew. And if you need a vegan-friendly chocolate option, just go for a vegan dark chocolate with at least 70% cocoa.

Why These Ingredients Are So Good for You

  • Bio Puffed Quinoa – A light and crunchy base that’s rich in plant-based protein, fiber, and essential minerals like iron and magnesium. Quinoa is also gluten-free and a complete protein, meaning it contains all nine essential amino acids.
  • Bio Unsweetened Peanut Butter – Packed with healthy monounsaturated fats, protein, and vitamin E, peanut butter provides long-lasting energy and helps keep you full.
  • Flower Honey – A natural sweetener with antioxidant and antibacterial properties, honey adds a subtle floral sweetness while helping bind the ingredients together.
  • Dark Chocolate (75%) – High-quality dark chocolate is rich in antioxidants, iron, and magnesium, and can support heart health when consumed in moderation.
  • Salt Flowers – A pinch of this delicate sea salt enhances the flavors while providing trace minerals like potassium and magnesium.

These bars are protein-packed, fiber-rich, and full of healthy fats, making them a great energy-boosting snack for busy days. Plus, they’re naturally sweetened and toddler-friendly (after the second year).

Just remember to keep them refrigerated! Enjoy!
