Ingredients

  • 500 gr shrimps , remove the shell from the body, but with head and tail intact, fresh or frozen
  • 1 medium green bell pepper , finely diced
  • 2 large tomatoes , grated ( ≈2 cups)
  • 1 small yellow onion , finely diced
  • 2 cloves garlic , minced
  • 200 gr feta , crumbled
  • 1 tbsp tomato paste
  • 3 tbsp olive oil
  • 1/4 cup ouzo
  • 1 tsp granulated sugar
  • 2 tbsp fresh basil , finely chopped
  • 1 tsp oregano , fresh or dry
  • 1/4 tsp salt
  • 1/2 tsp black pepper
  • 1 pinch chili flakes
  • 1-2 star anise , optional

Instructions

  • Place a large pan over high heat, add one tablespoon of the olive oil, and let it get hot.
  • Season the shrimps with salt and pepper right before cooking and add them to the hot pan.
  • Sauté for one minute total, until they are golden red on both sides. We don't want to overcook them.
  • When ready, transfer to a plate and set aside.
  • Add the rest of the olive oil to the pan and reduce the heat to medium-high.
  • Add the diced onion, green bell pepper, salt, black pepper, chili flakes, oregano, and star anise. Sauté for 5-7 minutes until soft.
  • Add the minced garlic and mix for a minute.
  • Add the tomato paste and mix for a minute.
  • Add the ouzo and let evaporate all the alcohol.
  • Add the grated tomato and sugar and bring to a boil.
  • Add the fresh basil and the shrimps. Mix the ingredients and let cook for 9-10 minutes until you have a rich, thick sauce.
  • Last add the crumbled feta and let it melt for 1-2 minutes in the hot sauce.
  • Remove the pan from the heat and enjoy!
