Pasta With Tuna Sauce

Ingredients
  

  • 300 gr canned tuna
  • 400 gr tomato sauce
  • 1 tbsp olive oil , extra virgin
  • 1 green bell pepper , diced
  • 1 large yellow onion , finely chopped
  • 2 cloves garlic , finely chopped
  • 2 tbsp green seedless olives , chopped
  • 2 tbsp corn , canned
  • 1 tbsp capers
  • ¼ tsp salt
  • ½ tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 bay leaf
  • a pinch of chili flakes
  • ½ cup hot water

Pasta

  • 500 gr spaghetti or dry pasta of your choice

Instructions
 

  • In a large pot, heat the olive oil over medium-high heat.
  • Add the chopped onions and sauté for about 3 minutes.
  • Add the garlic, olives, corn, and caper and sauté for about 3-5 minutes.
  • Add the canned tuna and spices like oregano, thyme, bay leaf, salt, and pepper and mix for a couple of minutes.
  • Add the tomato sauce and hot water and mix well until combined. Put the lid on and let the sauce boil.
  • Reduce heat to medium-low and simmer with the lid on for about 15 minutes.
  • Remove the lid and cook for an additional 5 minutes if there is a lot of liquid in your tuna sauce. The sauce should be thick and aromatic.

Pasta

  • Bring a large pot of salted water to boil.
  • Cook the pasta according to the instructions on the package. I prefer to cook my pasta for 1 minute or 1 and a half minutes less than the packaging instructions suggest.

Notes

  • Served: Serve with grated parmesan cheese on top.
  • Variations: 
    • For the tuna sauce:
      • Add more fresh or dried herbs like basil, dill, mint, and fresh or canned veggies like mushrooms, grated carrot, etc.
      • Spice up the tuna sauce with flavors like cumin, chili, or smoked paprika.
    • Instead of pasta, serve the tuna sauce with rice or mashed potatoes.
  • Storage: Serve and enjoy it immediately. Store the tuna sauce in an airtight container in the fridge for up to 5 days.
  • Extra calories note: Approximately one serving of tuna sauce has 298 kcal, and one serving with spaghetti and tuna sauce has 738 kcal.
