Savory Cookies with Feta

- 1 1/2 cups oats
- 1 egg white
- 2 tbsp Greek yogurt
- 1 tbsp olive oil , extra virgin
- 1 tbsp flax seeds
- 2 tbsp milk
- 1 tsp dried thyme
- 1 tsp sweet paprika
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1 tsp chia seeds
- 1 cup crumbled feta cheese
- 1 egg yolk
- 1 tsp milk or water
Preheat the oven to 180°C, set it to the fan mode, or to conventional heating.
Add the oats to a food processor and blend it until it becomes like flour.
Add all the ingredients (greek yogurt, olive oil, egg white, thyme, paprika, feta, black pepper, and chia and flax seeds) in a big bowl except the oat flour and mix them with a spatula.
Now add the oat flour in the mixture and stir with a spatula until it becomes a chunky dough.
Shape with your hands the savory cookies in a size of about 5 cm and a thickness of 1.5 – 2 cm and transfer to a baking pan lined with parchment paper.
Brush them with the egg wash (combine the egg yolk with some milk or water) and bake them for 20-25 minutes.
